Honey Lemon Chicken

Similar to lemon chicken from your local Chinese restaurant, but packed with more flavor, and not deep fried.

lb chicken breast cut into medium cubes

cup flour

cup sake or rice wine or chicken broth
|

cup honey
|
|

oz rice wine vinegar
|
|

tbsp soy sauce

tbsp garlic minced
|

lemon (grated rind)

cup oil

tbsp cornstarch (mixed with 2 tbsp cold water)

Combine chicken and flour in a large bowl. Toss to coat.
Combine remaining ingredients, stir until honey is well combined.
Heat oil in a large fry pan. Using a colander - toss the chicken and flour mixture so that excess flour is knocked off and chicken is only lightly coated. When oil is hot add chicken in a single layer (you may need to do this in several batches depending on the size of your pan). When chicken is browned on all sides (about 5-7 minutes) reduce heat to medium and add sauce. Bring to a boil. Stir until sauce is thickened and chicken is cooked through and coated in sauce. Serve.
