Breakfast Burritos

Serves 12
Ingredients
12 flour tortillas
12 eggs
6 egg whites
4 cup frozen breakfast potatoes (cubed)
1/2 lb breakfast sausage
1/2 lb chorizo sausage
1 lb monterrey jack cheese - shredded
10 oz green chili sauce
Directions
Cook Potatoes according to package directions
Brown Sausage (and chorizo if desired) in a large skillet
Combine eggs and egg whites in a large bowl. Whisk to combine and scramble in a large skillet.

Combine scrambled eggs, cooked sausage and cooked potatoes in a large bowl. Toss to combine.
Fill each tortilla will egg/potato/sausage mixture. Spoon green chili sauce over top, sprinkle with cheese. Roll up tortilla burrito style.

Serve immediately or refrigerate for up to 4 days, wrapped in plastic wrap. Or - wrap in plastic wrap or aluminum foil and freeze. To reheat - unwrap and microwave for 2-2 1/2 minutes.
