Roasted Red Potatoes with Parsley and Garlic

Serves 4
Ingredients
1 lb red potatoes quartered
5 garlic cloves minced
1/2 cup Italian parsley - chopped
3 tbsp olive oil
kosher salt (to taste)
fresh cracked black pepper (to taste)
Directions
Preheat oven to 400 degrees fahrenheit.

Combine remaining ingredients in a 13x9 inch glass baking dish.

Bake for 30 minutes or until potatoes are soft.
