Cilantro and Ginger Rice Pilaf

cup basmati rice
|
|

cup cilantro - chopped
|
|
1/4
|
cup green onions - greens only, sliced
|
|
1
|
garlic clove - minced
|
|
1
|
tsp fresh ginger root - grated
|
|
1/2
|
lime - juiced
|
|
1/2
|
tbsp canola oil
|
|
|
salt and pepper - to taste
|
Cook rice according to package directions. Remove from heat and cool slightly.
In a large skillet - heat oil over medium heat. Add onions, garlic and ginger. Cook for 1-2 minutes, Add lime juice and cilantro.
Add cooked rice to pan and toss to coat. Season with salt and pepper to taste. Serve.
