Slow Cooker Sweet and Salty Pulled Pork

A versatile recipe that can be used with Asian, Mexican or American dishes.

Serves 8
Ingredients
4 lb bone-in pork roast (shoulder or rump)
10 oz beer (preferably ale)
1/4 cup soy sauce
1/4 cup maple syrup
1/2 yellow onion - sliced
3 cloves garlic - smashed
3 tbsp canola oil
Directions
Heat a large dutch oven or heavy bottom saute pan over high heat. Add canola oil.

Lightly salt and pepper the outside of the pork roast. Brown pork roast for 3 min per side (or until nicely browned crust forms). Remove from pan and discard drippings.

Place onions and garlic in the bottom of your slow cooker. Place whole pork roast over top of onions. Pour beer, soy sauce and maple syrup over top of the roast. Cover and cook on low heat for 4-6 hours, or until meat can be easily shredded with a fork.

Remove bone from roast, and any large strips of fat. Using two forks gently pull meat apart to shred. Stir in slow cooker juices. Serve on rolls with barbeque sauce or as a filling for burritos, soft tacos, etc.
