Classic Pizzelle Cookie

A delicious recipe from my Mother-in-law who introduced me to this wonderful, light Italian cookie that is perfect with a hot cup of tea.

cup all purpose flour

tsp baking powder

cup sugar

cup unsalted butter , melted

tbsp vanilla extract or anise extract
|
Place flour and baking powder in a small bowl and stir to combine; reserve. Place eggs and sugar in a medium bow. Mix on medium speed for 1 minutes, until thickened. On low speed, add the melted butter and vanilla/anise in a steady stream and mix until combined, about 15 seconds. Add the flour mixture and mix until just combined, about 10-15 seconds; do not over mix. Follow the directions fro baking the pizzelles that come with the pizzelle maker. Makes 36-40 cookies
