Cucumber, Radish, Avocado and Bell Pepper Salad

Serves 4
Ingredients
1 bunch radishes - stems removed and cut into 4ths
1 English cucumber - large dice
1/2 avocado - seed removed and pulp chopped to large dice
1 orange bell pepper - chopped
1 cup grape tomatoes
1 tsp seame oil
3 tbsp rice vinegar
1 tbsp sesame seeds
salt and pepper - to taste
Directions
Combine cucumber, bell pepper, grape tomatoes, sesame oil, vinegar in a bowl. Toss to coat. Allow to marinate in refrigerator for 15 minutes (or up to 2 hours).

Remove from refrigerator and add radishes and avocado. Sprinkle with sesame seeds, salt and pepper. Toss to coat and serve.
