Cucumber, Radish, Avocado and Bell Pepper Salad

bunch radishes - stems removed and cut into 4ths
|

English cucumber - large dice
|
|
1/2
|
avocado - seed removed and pulp chopped to large dice
|
|

|
orange bell pepper - chopped
|
|
1
|
cup grape tomatoes
|
|

|
tsp seame oil
|
|

tbsp rice vinegar
|
|

tbsp sesame seeds
|
|
|
salt and pepper - to taste
|
Combine cucumber, bell pepper, grape tomatoes, sesame oil, vinegar in a bowl. Toss to coat. Allow to marinate in refrigerator for 15 minutes (or up to 2 hours).
Remove from refrigerator and add radishes and avocado. Sprinkle with sesame seeds, salt and pepper. Toss to coat and serve.
