Roasted Zucchini with Feta Cheese

Nicely roasted zucchini and savory feta cheese combine for this unique and delicious zucchini dish.

zucchinis - cut into a large dice
|
|
1-2
|
tbsp extra virgin olive oil
|
|
|
salt and pepper taste
|

cup feta cheese - crumbled
|
Preheat oven to 400 degrees Fahrenheit.
Place zucchini in a 9x11 inch metal baking dish. Sprinkle olive oil over top, season with salt and pepper and toss to coat.
Bake for 15 minutes, stir, sprinkle with feta cheese and bake an additional 10 minutes.
Serve.
