Prepare the marinade for this chicken in the morning before work and it is a quick dinner to cook up when you get home from work
Heat curry powder over medium heat in a dry saute pan until fragrant. Remove from heat.
For marinade: Combine curry powder and lime vinaigrette in a large bowl. Stir until curry powder is well incorporated.
Rinse chicken breasts and pat dry. Place chicken in marinade. Toss to coat. Refrigerate and allow to marinade for 3 hours (up to overnight).
Preheat oven to 400 degrees Fahrenheit.
Heat a large fry pan over medium high heat. Add canola oil. Dip each chicken breast in flour and then fry in pan until golden brown (3-5 minutes per side).
Remove chicken from the fry pan and place on a sheet tray and bake for approximately 20 minutes (until internal temperature of chicken is 165 degrees Fahrenheit)
Serve.
Heating the curry powder in a dry pan heightens the flavor of the curry powder. This step is optional but recommended.
