Sweet and spicy chicken enchiladas

cup barbecue sauce

can Hatch Green Chili Enchilada Sauce

Preheat oven to 350 degrees Fahrenheit.
Rinse chicken and pat dry. Place breasts in the bottom of a large sauce pan. Combine barbecue sauce, chipotle peppers and tomato sauce in a medium bowl. Pour sauce over chicken breasts in the sauce pan. Bring sauce to a boil, cover and simmer for approximately 45 minutes. Chicken is done when the meat easily shreds with a fork.
Using two forks, shred all chicken and mix the sauce into the chicken. This is your filling for your enchiladas.
Place one flour tortilla on a flat surface, spoon about 1/4 cup filling onto the tortilla. Fold down top and bottom of tortilla and then roll from left to right. Place seam side down in a 9x13 rectangular glass baking dish. Repeat with remaining tortillas and filling.
Pour green chili enchilada sauce over filled enchiladas. Sprinkle with cheese.
Bake for 30 minutes until cheese is melted and enchiladas are heated through.
