Gouda and Monterey Jack Mac N Cheese with Herb Topping

Comfort foods are ones that remind you of childhood and the warmth of home. What better than macaroni and cheese. But forget the neon orange powdered cheese and try this adult version of a childhood favorite.
Prep Time : 10 minutes
Cook Time : 20 minutes
Serves 4
Ingredients
3 cup Elbow Macaroni Noodles
1 tbsp butter
2 tbsp flour
1 cup milk (hot)
4 oz monterrey jack cheese - shredded
4 oz gouda cheese - shredded
nutmeg (dash)
cayenne pepper (dash)
1 tsp salt
1 tbsp butter
2 tbsp fresh parsley - minced
1 tsp fresh thyme - minced
2 tsp fresh oregano - minced
1 cup panko japanese bread crumbs
salt and pepper - to taste
Directions
Cook noodles according to package directions. Drain and keep warm in a large casserole dish.

While noodles cook, melt butter in a saucepan over medium heat. Add flour and stir with a wooden spoon. Cook and stir until flour turns light golden brown (about 3 minutes). Slowly whisk in hot milk. Add salt, nutmeg and cayenne pepper. Slowly stir in cheeses. Cook and stir until cheese is melted, incorporated and a smooth consistency. Pour over macaroni noodles and mix to coat.

For topping: Heat butter in a skillet over medium heat. Add herbs, cook and stir for 1-2 minutes until fragrant. Add panko, salt and pepper. Cook for 3-5 minutes until bread crumbs are lightly toasted. Sprinkle over the top of macaroni and cheese.

Serve.
Chef's Notes
If you are unable to find panko breadcrumbs, you can substitute traditional breadcrumbs.
