Turkey Chili

Ground turkey meat cuts down on the fat and calories, but doesn't sacrifice flavor in this warm and spicy chili

Serves 6
Ingredients
1/4 tsp cayenne pepper
1 tsp sweet paprika
1 1/2 tbsp chili powder
1 tsp cinnamon
1/2 tsp cumin
1/2 cup celery chopped
1 cup onion chopped
1/2 cup green bell pepper chopped
1 lb ground turkey
1 tbsp canola oil
1 garlic clove minced
1/2 tsp garlic salt
1 tsp dried oregano
1/2 tsp crushed red pepper flakes
2 tbsp apple cider vinegar
2 can diced tomatoes (14.5 oz can)
8 oz canned corn
8 oz tomato sauce
1 can red kidney beans (15 oz can)
1 can great northern beans (15 oz can)
1 cup chicken broth
1 tbsp salt
Directions
Combine cayenne pepper, paprika, chili powder, cinnamon, and cumin in a small bowl. Heat a 2 gallon sized stock pot over medium high heat. Add canola oil. Saute onions and peppers in oil until onions are lightly translucent. Add ground turkey, spice mixture and minced garlic. Cook and stir until turkey is browned.

Add vinegar and cook until most of the vinegar is cooked off.

Add remaining ingredients to pot. Bring to a boil, cover and reduce heat to low. Simmer for 1 hour.

Serve with shredded cheddar cheese or sour cream if desired.
Chef's Notes
You can also put this recipe into a slow cooker after the vinegar is added and cook on low for 4-6 hours.
