Chunky Fresh Tomato Basil Sauce

cup tomatoes chopped (about 3 large tomatoes)

tbsp fresh basil leaves chopped

tbsp canola oil

tbsp extra virgin olive oil

tbsp balsamic vinegar

cup parmesan reggiano cheese freshly grated

salt and pepper (to taste)

Heat canola oil in a large fry pan over high heat. When pan is very hot add tomatoes and basil all at once. Let tomatoes sit in pan for 1-2 minutes without stirring. Add olive oil, vinegar, salt and pepper. Cook and stir for 2-3 minutes. Stir in 1/2 of the parmesan cheese. Save remaining parmesan cheese to sprinkle over top of pasta. Serve immediately over your favorite pasta.
