Eggs Florentine

Serves 4
Ingredients
10 oz frozen chopped spinach (defrosted and drained)
1 can cheddar cheese soup (11 oz can)
4 eggs
1 tbsp milk
2 tsp onion minced
1/2 tsp dry mustard
grated parmesan cheese (for garnish)
Directions
Combine spinach and half of the soup. Spoon into four individual casserole dishes - spread evenly. Break 1 egg into each dish. Bake at 350 degrees F, for 20-25 minutes or until eggs are set.

In a saucepan, heat remaining soup, dry mustard, milk and onion. When heated through, spoon over cooked eggs, after removing from the oven, and serve. Garnish with grated parmesan cheese.
