Almond-Shallot Orzo

Delicately sweet, almonds make this a fragrant, yet versatile side.
Prep Time : 10 minutes
Cook Time : 15 minutes
Serves 4
Ingredients
1 cup orzo
1/4 cup sliced almonds
2 shallots minced
1/8 cup dry white wine
1 tbsp canola oil
1 tsp kosher salt
1/2 tsp fresh cracked white pepper
Directions
Cook orzo according to package directions. Drain and rinse in cold water.

Heat a large saute pan over medium heat. Add canola oil. Add shallots and cook and stir until translucent and slightly browned.

Add almonds and garlic. Cook for an additional 1-2 minutes.

Add orzo, salt, pepper and white wine. Cook and stir for an additional 2-3 minutes. Serve.
