Slow Cooked Chipotle BBQ Pulled Pork Sandwiches

Although this recipe is prepared in the slow cooker, not on the BBQ, the Spicy-Sour sauce lends plenty of flavor!

can tomato sauce (8 oz)

tbsp apple cider vinegar

tbsp Worcestershire sauce

tbsp whole grain dijon mustard

tbsp chipotle peppers in adobo sauce (minced)

pork roast (4-5 lbs)

onion sliced

whole grain rolls
|
Rub pork roast all over with first 4 ingredients. Place in slow cooker.
For Sauce:
In a small saucepan combine remaining ingredients (except sliced onion and rolls). Bring to a low boil, stirring occasionally.
Reserve 1/2 cup sauce. Pour remaining sauce into the slow cooker and cook on low for approximately 6 hours, or until meat shreds easily with a fork. Once Pork is done, remove from slow cooker and using two forks shred the meat. Add 1/4 cup cooking liquid back into meat. Discard remainder of the cooking liquid. Return meat to slow cooker and hold on warm setting until ready to serve.
Saute onions in a little oil until lightly browned. Serve Sandwiches on rolls, topped with the sauteed onions and some of the reserved BBQ Sauce.
