Ginger Lime Shrimp

tsp fresh ginger root

tsp chinese mustard

tsp soy sauce

tbsp rice vinegar

tsp sesame oil

lb shrimp (uncooked and peeled)

cup cooked rice (hot)

Grate zest from lime and juice the lime.
For marinade:
Combine lime zest and juice with ginger, mustard, soy sauce, vinegar and oils in a medium bowl. Reserve 3 tbsp of marinade. Add peeled shrimp to remaining marinade. Allow to marinate for 15-20 minutes.
Spray a saute pan with cooking spray and heat the pan on high.
Using a fine strainer, strain shrimp from marinade.
When pan is very hot, add shrimp and cook until pink. Serve over rice and drizzle with reserved marinade.
