Pesto Salmon over Sauteed Vegetables

This low fat recipe is full of antioxidants and heart healthy ingredients!
Prep Time : 10 minutes
Cook Time : 15 minutes
Serves 4
Ingredients
1 1/2 lb salmon filet (cut into 4 pieces)
2 tbsp pesto spread
4 cup baby spinach cleaned and drained
1 cup roasted red peppers
2 cup cherry tomatoes
2 garlic cloves thinnly sliced
1/2 tbsp extra virgin olive oil
salt and pepper to taste
Directions
Preheat oven to 400 degrees F.

Place salmon on a metal baking sheet. Spread pesto lightly over top of each piece of salmon.

Bake for 10-15 minutes, until salmon flakes easily with a fork.

Meanwhile; heat olive oil in a large saute pan over medium heat. Add garlic and saute until translucent. Add tomatoes, cook and stir until they begin to burst. Add spinach and roasted red peppers. Cook and stir until spinach is wilted. Lightly season with salt and pepper.

Serve salmon over the vegetables.
