Chicken, Chorizo, Rice and Bean Bake

cup tomato sauce

cup chicken broth

cup shredded cheddar cheese

cup black beans (canned) rinsed and drained

cup pre-cooked chorizo sausage links , sliced

cup cooked chicken (cubed)

green chili sauce (optional)

Preheat oven to 400 degrees F.
Combine first 6 ingredients in a medium saucepan. Bring to a boil, cover, reduce heat to low and simmer for 20 minutes.
Remove rice from saucepan and spread evenly over the bottom of a 9x11 casserole dish. Pour chicken broth over the rice. Sprinkle cheese over rice.
Combine corn and black beans. Lightly season with salt and pepper. Layer corn and bean mixture over cheese. Layer chorizo and chicken over corn mixture.
Cover and bake for 35-45 minutes, until heated through.
Serve with green chili sauce if desired.
