Mustard's Mashed Potatoes

lb yukon gold potato , peeled and cut into 2 inch squared

cup half and half (or cream)
|

cup butter cubed

tsp garlic minced

tsp freshly ground black pepper
|
Place potatoes and salt in a large pot of cold water. Use enough water to cover potatoes.
Bring to a boil, reduce the heat to a strong simmer and cook for 15-20 minutes, until the potatoes are tender when poked with a fork but not too mushy.
Drain the potatoes and transfer them to a stand mixer fitted with the paddle attachment (or use a potato masher for a lumpier consistency). Add 3/4 cup half and half, the butter, garlic and pepper. Mix on low speed to combine, then increase the speed to medium to mix thoroughly. Add more half and half if the potatoes seem too thick. Taste and adjust the salt if needed.
