Salmon with Zesty Almond Crust

lb salmon filet (skin on)

lemon (zest removed and reserved)

cup sliced almonds

tbsp canola oil

cup flour

tsp cayenne pepper

|
Preheat oven to 450 degrees F.
Rinse fish and pat dry.
In a food processor, process almonds until they reach the consistency of corn meal. In a bowl combine lemon zest, almonds, 1/2 Tbsp flour, salt and cayenne pepper.
In another bowl beat egg and water. Dip fish (flesh side only) into flour, then egg, and then place on a plate. Gently press almond mixture onto the fish (flesh side only).
Heat a pan over medium heat. Add oil. Pan fry fish, flesh side down for 3 minutes, being careful not to burn the topping. Remove from the pan and transfer to a broiler pan.
Bake fish in preheated oven for 5-10 minutes, or until cooked through.
