Peach Glazed Salmon

The sweetness of the Peach Preserves compliments the meaty flavor of the salmon
Prep Time : 5 minutes
Cook Time : 20 minutes
Serves 2
Ingredients
12 oz salmon filet (cut into 2 pieces)
4 tbsp peach preserves
salt and pepper
1 tbsp canola oil
Directions
Preaheat oven to 400 degrees F.

Rinse salmon and pat dry. Lightly sprinkle with salt and pepper.

Heat the canola oil in a large skillet over high heat. When the oil is hot, add the salmon skin side up to the pan. Allow to sear for 3 minutes, or until a nice crust forms. Flip salmon and allow to cook for an additional 3 minutes, skin side down.

Remove salmon from skillet and place on a metal baking sheet skin side down. Brush top generously with peach preserves. Bake on the top rack for 10-15 minutes, or until salmon is cooked through.
