White Beans with Caramelized Onions and Mushrooms

can Great Northern Beans (15 oz)
|

cup cremini mushrooms chopped
|
|
1
|
cup onion diced
|
|

garlic cloves thinly sliced
|
|

tsp fresh thyme chopped
|
|
1/2
|
cup white wine
|
|
1
|
tbsp canola oil
|
|
1/2
|
tbsp butter
|
|
|
salt and pepper (to taste)
|
Heat oil in a medium saute pan over medium heat. Add onion. Cook, stirring occassionally for 5-7 minutes, until onion begins to brown. Turn heat up to medium high.
Add mushrooms to pan, cook and stir until mushrooms brown. Add garlic and thyme. Cook for 2-3 minutes, turn heat down if garlic begins to burn.
Add wine to pan, cook and stir, scraping the bottom of the pan for 2-3 minutes until wine reduces by 1/2. Add butter, stir until melted.
Remove pan from heat. Drain and rinse beans. Add beans to pan. Toss to coat. Season with salt and pepper.
