bell peppers - top 1/2 inch cut off, seeds and membranes removed.

cup celery diced

tbsp onion minced

cup long grain white rice

tomato chopped

cup ketchup

|
Preheat oven to 350 degrees
Place rice and 2 cups cold water to cover in a medium saucepan. Bring to a boil and cook for 10 minutes. Drain. Reserve rice.
Saute onion and celery in oil over medium heat in a saute pan. Add beef, brown.
In a large bowl combine beef mixture, rice, oregano, salt, pepper, tomato, tomato sauce, ketchup, sugar and cheddar cheese. Mix thoroughly.
Place peppers, cut side up, on a shallow baking pan. Fill each pepper half with beef mixture.
Bake uncovered for 30-45minutes until rice is cooked and peppers are heated through.
