Southwest Salad

Serves 4
Ingredients
1/2 cup black beans rinsed and drained
1/2 cup corn rinsed and drained
1/2 red bell pepper chopped
1/4 cup red onion diced
1 roma tomatoes diced
1/4 cup shredded cheddar cheese
1/2 cup fried tortilla strips
4 cup romaine lettuce
1 lime juiced, juice reserved
1/4 cup mayonnaise
1 tbsp apple cider vinegar
1/2 tsp salt
1/4 tsp cayenne pepper
1/2 tsp chili powder
3 tbsp fresh cilantro
Directions
Combine first 8 ingredients in a large bowl.

For dressing:
Combine lime juice, mayonnaise, vinegar, salt, cayenne, chili powder and cilantro in a food processor. Process until smooth.

Pour dressing over salad and toss to coat.
Chef's Notes
Use low-fat or fat free mayonnaise to cut calories in the salad dressing.
