Grilled Veggie Sandwich with Hummus and Goat Cheese

Serves 4
Ingredients
1 eggplant sliced thin (8-12 slices)
1 zucchini sliced thin (8-12 slices)
1/2 yellow onion sliced thin (8 slices)
2 red bell pepper cut into large pieces, seeds and membranes removed
1/2 cup extra virgin olive oil
1/4 cup white wine vinegar
2 tbsp capers drained and chopped
4 oz goat cheese
8 slice foccacia bread
1/4 cup prepared hummus
1/2 tsp fresh ground black pepper
Directions
Preheat your grill to high.

Brush vegetables with olive oil. Grill vegetables on both sides until veggies are soft and lightly blackened.

Place hot veggies in a large bowl. Add capers, pepper, vinegar and remainder of the olive oil in the bowl and toss to coat. Cover with plastic wrap and allow to sit at room temperature for 5 minutes.

Meanwhile, quickly toast bread on grill. Remove from grill and spread each piece evenly with hummus. Top each slice with eggplant, zucchini, onion and bell pepper. Crumble goat cheese and sprinkle over sandwiches. Serve open faced with a knife and fork.
