Grilled Green Vegetable Medley

tbsp olive oil

zucchini sliced lengthwise

yellow onion

asparagus bunch - woody ends removed

tbsp golden balsamic vinegar

tsp black pepper - freshly cracked

|
Preheat grill to high.
Remove skin from onion, and cut off end (not root end). Push a skewer through onion widthwise, and slice about 1/2 inch thick so that the skewer is holding together rings of the onion. Repeat with remaining skewers and onion. Brush both sides of onion with olive oil and sprinkle with salt and pepper. Toss zucchini and asparagus in olive oil to coat and sprinkle with salt and pepper.
Turn grill down to medium.
Grill onion, zucchini and asparagus for approximately 5 minutes on each side, or until the vegetables are crisp tender and the onion is soft. Remove from grill.
Remove skewers from the onion slices and cut into 1/2 inch pieces. Slice zucchini and asparagus also into 1/2 inch slices.
Add onion, asparagus and zucchini to a bowl, toss with vinegar.
This dish can be served hot, or cold.
