Soy Lime Pork Loin

limes - zest and juice reserved

|

tbsp brown sugar

tsp sesame oil

tsp Asian garlic chili sauce

cup chicken broth

cup soy sauce

tbsp honey

boneless pork loin (1 1/2 lbs)

For marinade:
Zest limes and add to a medium mixing bowl. Juice the limes and add to the zest. Combine brown sugar, sesame oil, garlic chili sauce, broth and soy sauce. Mix well. Reserve 1/4 cup of the marinade in a separate bowl. Place pork loin in a gallon sized zip top baggie. Add marinade. Allow to marinate for 30 minutes to overnight.
Preheat grill to medium. Remove pork loin from marinade. Discard the marinade. Grill pork loin, turning occasionally to evenly cook, for 25-35 minutes. Pork is done when it is only slightly pink in the center. Allow to rest for 5-10 minutes.
For sauce:
Combine honey with the reserved marinade, heat quickly in the microwave.
Slice pork loin and drizzle with sauce.
