Stuffed Peppers

green bell pepper halved lengthwise

lb ground turkey

cup long grain white rice

onion minced

can tomato sauce 8 oz

tsp dried oregano

cup cheddar cheese shredded

tbsp canola oil

Preheat oven to 350 degrees
Place rice and cold water to cover in a medium saucepan. Bring to a boil and cook for 10 minutes. Drain. Reserve rice.
Saute onion and garlic in oil over medium heat in a saute pan. Add turkey, brown. Add red bell pepper and cook until soft. In a large bowl combine turkey mixture, rice, oregano, salt, pepper, 1/2 tomato sauce and 1 cup cheese. Mix thoroughly.
Place green pepper halves, cut side up, on a shallow baking pan. Fill each pepper half with turkey mixture. Spoon remaining tomato sauce over stuffed peppers and sprinkle with remaining cheese. Bake uncovered for 35-45 minutes until rice is cooked and peppers are heated through.
