Sweet Potato Puree

A play on mashed potatoes using the colorful and flavorful sweet potato (yam).
Prep Time : 10 minutes
Cook Time : 59 minutes
Serves 4
Ingredients
2 lb yams whole, with skin on
1/2 lb russet potatoes
1/4 lb butter
1/4 cup cream hot
salt and pepper to taste
Directions
Preheat oven to 400 degrees

Place yams and russet potatoes on the rack in preheated oven. Bake for 40-50 minutes or until they are soft all the way through. Check doneness with a small knife.

When cooked, cut in half and scoop out flesh of potatoes and yams into a large bowl. Add butter, salt, pepper and half of cream. Mash with a potato masher until smooth consistency. Add remaining cream if necessary. Season with salt and pepper to taste.
