Balsamic and Honey Leek Chicken with Blue Cheese Crumbles

Sweet and sour honey and Balsamic vinegar combine with buttery leeks and blue cheese

leeks - whites only, cleaned and sliced thin
|

garlic clove sliced

tbsp butter
|

tbsp olive oil

cup flour

salt and pepper to taste

cup chicken broth
|

cup balsamic vinegar
|

tbsp honey
|

blue cheese (high quality danish)
|
Sweat leeks and garlic in butter over medium low heat in a large fry pan, until leeks are soft. Remove from pan. Add oil to pan and heat over medium high heat.
Sprinkle chicken with salt and pepper and lightly coat chicken in flour. Place flour coated chicken in hot pan. Brown each side for 3-5 minutes.
Combine leek mixture, chicken broth, vinegar and honey in a bowl, pour over chicken. Bring to a boil, cover, reduce heat to low and simmer for 10 minutes.
Serve chicken, topped with sauce and sprinkle with blue cheese crumbles.
