Pinto Beans and Quinoa Pilaf

This recipe packs almost 10 grams of protein per serving. Making it a great vegetarian side dish. Omit the feta cheese to make it vegan.

cup quinoa (uncooked)

red bell pepper - minced

cup red onion - minced

cloves garlic - minced

tbsp olive oil

cup canned pinto beans (drained and rinsed)

tbsp Italian salad dressing

cup feta cheese - crumbled
|

salt - to taste
|
Heat a medium sized sauce pan over low heat. Add olive oil, peppers, onions and garlic. Cook and stir until vegetables are soft. Add quinoa. Stir to mix and coat quinoa in olive oil.
Add water. Bring to a boil, cover, and reduce heat to low. Simmer for 20 minutes or until quinoa is cooked according to package directions. Turn heat off and add pinto beans, allow beans and quinoa to steam (covered) for 5 minutes in the pan.
Transfer to a large bowl. Add dressing and feta cheese. Mix and season with salt to taste. Serve.
