Ahi Tuna and Mango Salad

Low calorie sesame soy dressing, seared tuna and sweet ripe mango

cup romain lettuce - chopped

cup cucumber - chopped

cup Sugar Snap Peas
|

tomato - cut into wedges
|

mango - ripe and cut into small dice

avocado - cut into small dice

orange bell pepper - cut into small dice

cup red onion - cut into small dice

lb ahi tuna steaks
|
|
|
salt and pepper (to taste)
|
|
|
sesame seeds (as garnish)

soy sauce
|

tbsp chinese mustard
|
|

lemons - juiced, juice reserved
|
|

tbsp seasoned rice vinegar
|
|

tbsp balsamic vinegar (high quality)

tsp sesame oil

tbsp canola oil
|
Place lettuce, cucumber, snap peas and tomato on each serving plate.
Combine mango, avocado, bell pepper, and red onion in a bowl.
For dressing:
Combine soy sauce, mustard, lemon juice, rice vinegar, balsamic vinegar and sesame oil in a small bowl. Whisk to combine. Pour 1/2 dressing over mango mixture in the bowl. Toss to coat.
Heat a large heavy bottomed saute pan over high heat. Lightly season tuna steak with salt and pepper. When pan is very hot, add canola oil. When oil is smoking, place tuna steak down. Let sear for 2-3 minutes, until nicely browned. Gently flip and sear an additional 2-3 minuted until desired degree of doneness (recommend raw in the center). Remove tuna from pan and slice into long strips.
Place mango mixture over lettuce. Place sliced tuna over mango mixture. Spoon remaining dressing over top of tuna. Sprinkle with sesame seeds to garnish.
