Lemon Pesto Halibut

tbsp canola oil
|
|

tbsp pesto spread
|

lemon (zest removed and reserved)

salt and pepper (to taste)

Preheat oven to 400 degrees Fahrenheit.
Rinse fish and pat dry. Sprinkle with salt and pepper.
Heat a large skillet over high heat. Add canola oil. When oil begins to smoke, add fish, flesh side down. Cook for about 5 minutes, until a nice golden crust forms. Remove from heat and place skin side down on a metal baking sheet.
Spread the lemon zest and pesto evenly across the halibut filet. Bake for 10 minutes or until the fish flakes easily with a fork.
Remove from the oven and squeeze fresh lemon juice over the top of the fish. Serve.
