White Chocolate and Peppermint Cheesecake Bars

Mix brown sugar, chopped nuts and flour together in a large bowl. Stir in melted butter and mix until light and crumbly. Press into the bottom of a 8 or 9 inch square baking dish. Bake at 350 degrees Fahrenheit for 12-15 minutes. Remove from the oven and set aside.
Beat cream cheese until smooth with 1/4 cup sugar. Beat in the egg, lemon juice, milk and vanilla extract. Pour this onto the baked crust. Return to the 350 degree oven and bake for 20-25 more minutes until cheesecake mixture is set. Allow to cool slightly.
While squares are cooling: melt white chocolate chips in a microwave safe dish for 1-2 minutes until smooth and melted. Use a spoon to drizzle white chocolate over top of the cheesecake mixture. Sprinkle with crushed candy cane pieces.
Refrigerate overnight and cut into 2" squares. YIELD: 16 squares
