Quinoa Pilaf

Quinoa is a gluten-free grain, similar to rice, that is high in protein. It can be found in the specialty rice section of most grocers.
Prep Time : 5 minutes
Cook Time : 20 minutes
Serves 6
Ingredients
1 cup quinoa
2 cup water
1 carrot
1 celery stalks
1/2 yellow onion
1 tbsp olive oil
2 tbsp butter
2 tsp salt
1 tsp pepper
Directions
Combine carrot, celery and onion in a food processor. Process until mixture is finely grated.

Heat olive oil in a medium sauce pan over medium heat. Add carrot mixture, cook and stir for 3 minutes. Add quinoa, cook and stir for an additional 2 minutes.

Add water. Bring to a boil, cover and reduce heat to low. Simmer for 20 minutes, or until all water is absorbed.

Fluff with a fork, then stir in salt, pepper and butter. Serve.
