Olive Oil and Toasted Pine Nut Couscous

Ingredients
2/3 cup dry couscous
1 cup chicken broth
1/4 cup pine nuts
3 tbsp extra virgin olive oil
1 tsp salt
1/4 tsp fresh cracked white pepper
Directions
To toast pine nuts, heat a dry skillet over medium heat. Add pine nuts to pan and lightly cook, stirring occassionaly until pine nuts are lightly browned. Remove from heat and reserve.

In a medium sauce pan bring olive oil, broth, salt and pepper to a boil. Add pine nuts and couscous all at once. Stir to combine. Cover and remove from heat. Let couscous sit for 5 minutes, then stir with a fork and serve.
